Hey guys, it’s Robin!  You’re going love this really simple Ham & Swiss Salad, that has a deliciously smooth and creamy texture, with a subtle crunch.  It is really versatile, works in so many things, and is a quick (and inexpensive) little something you can bring to your book club next week! :)

I created this recipe while in college. I know, it kinda sounds strange to come up with something in college, that I still eat and enjoy today.  (Yeah, the whole budget thing is sometimes a downer for creativity in the kitchen.  But stay with me…)  It was during the time when sushi joints were just starting to pop up and catch on (so it seemed to me at the time, anyway) around 2003 or so. I decided to throw a little sushi party and I wanted to pull people in who really didn’t like the idea of raw fish. I kept having to explain to people that sushi is Japan’s equivalent of a burrito. I also had to let them know I wasn’t going to serve Sashimi (which is raw fish), so that they wouldn’t avoid coming. You know, the whole raw fish and food poisoning was a lot more worrisome 10 years ago. (I mean, it can still happen…..but as long as it’s properly prepared, no biggie.)

Anyway, I wanted to give the option of a non-fish sushi at my sushi party because I was getting the vibe that there were a few who didn’t like fish. Hey, this was when I was living in Utah, and good fish was hard to come by at the time. So it was not commonly eaten by the college crowd, except for maybe fish sticks or cod nuggets at the cafeteria. (I had neighbors make a movie about how bad the cod nuggets were. Really, so bad.)

So I chopped up a little bit of this and a little bit of that and whipped up this delicious Ham & Swiss Salad. Yes, super affordable and quick to make, but surprisingly, a hit when I created it all those years ago (and continues to be for anyone who tries it).  Hey, easy AND delicious is always a winner in my book! :)

It’s such a versatile mixture and is delicious on a sandwich roll, on a bed of salad greens, or atop your favorite crackers — or serve it hot inside a delicious panini and let the cheeses melt and do their thing!

The perfect recipe to whip up for a quick book club gathering, a fun lunch with friends, or as a pot-luck item to bring for game night this weekend!

Want to make some too?

Ingredient List:

  • 16 oz ham (sliced or chunk)
  • 2 stalks green onion (I use all the stalk up to where it is wilted)
  • ¼ cup chopped green bell pepper
  • 6 oz cream cheese, softened
  • ¼ cup mayonnaise
  • 1 cup shredded swiss cheese

Here’s everything you need:

Start with the 1 lb of ham. It can be chunk ham or it can be sliced from the deli section. I would not go for the lunch meat where you can’t feel the actual meat fibers. If it has been ground up and then formed, like bologna, I would stay away. The slices need to be a on the thicker side, so stay away from the paper thin stuff. Chop up the ham as if you were making bacon bits. Place in a bowl.

Slice up the 2 stalks of green onion. Okay, here’s how I feel about green onion. Go as far to the end of the stalk as you can before it is wilted or else you will hear me gasp in the background. In my opinion, the best part of the green onion is the dark green portion. So use it all! :)

Chop up 1/4 cup of bell pepper and shred 1 cup of Swiss cheese. Add these ingredients to the bowl. Add the 6 oz of cream cheese and 1/4 cup of mayo.

Mix until combined really well. And that’s all there is to it.

Just remember, there are many ways to use this salad. You can add it to your scrambled eggs, inside your omelet, placed on a toasted roll or inside your Panini. Or, like mentioned above, place some on a cracker or inside your sushi roll. And believe it or not, the sushi roll was pretty surprising. People raved for the ham salad sushi at my college sushi party and again when I made sushi for my brother’s family for New Year’s Eve not too long ago.

So go ahead and try it.

And let me know how you like it!
