Strawberry Cheesecake: Happy Belated Mother’s Day

 

I hope your weekend was warm and calm.
 
And free of sinks full of dishes.
And laundry hampers, for that matter.
We had a nice and quiet mother’s day.  With homemade pizza and cheesecake.  Delicious.
The cheesecake was made from the most friendly recipe I’ve ever used.  For some reason, it worked out great for me.  And no cracking.  Wow……now, that’s success for someone who has never made a crack-free cheesecake.  (And I have made my fair share of cheesecakes…….love them.)
Wish I could share a slice with you all……..because my hips are stressing out, knowing that I can’t (won’t) possibly waste this stuff.

I used strawberries instead of raspberries and instead of graham crackers for the crust, I crushed up gluten free oreo cookie knock offs (without the filling).
I made sure to let some of the ingredients warm up to room temperature like it says in the recipe……and I think that was the trick for me.
It turned out beautifully.

I love that there is a day to celebrate mothers.  I couldn’t be more grateful for my own mother, who took the time to make me feel as if I was her most prized possession.  (Even though she probably did the same with my 6 siblings………she’s sneaky!) I only hope to do the same with my own children.
