Pumpkin and Sausage Pasta

It’s officially the last day of summer today. Tomorrow ushers in fall…..and I have to admit, I’m excited. Once fall hits…………the magic of a season full of holidays, traditions, and family kicks in.

 

And last night, the weather was just right to re-introduce the flavor of pumpkin. And yes, he is only welcome during the fall and winter months. There’s something cozy about him.

 

A friend of mine told me about a pumpkin and sausage recipe from Rachel Ray, so I was on the hunt to find it.

 

And I’m so glad I did.

The only thing I did differently was substituted the white wine for chicken broth with a tablespoon of white vinegar. (I didn’t have any wine, and I read about the broth and vinegar as a substitute online.)

 

We served this with some squash and it was just perfect. Oh yum.
